Bean and Tuna salad
Simple and SOOOO yum
This recipe is so easy. It takes under 10 minutes and is packed full of flavor, protein and nutrients. The beans lend a bit of creaminess with the lime giving it a tang to offset. It is as delicious as it is nutritious and you should try it on your next meal prep day. It is a wonderful addition to your fridge for those “I don’t know what to eat” moments.
Bean and Tuna Salad
Serves: 2
Ingredients:
1 thinly sliced onion
4 tbsp fresh lime juice
2 cups cooked white beans
1-6.5 oz can water-packed tuna, drained
1 garlic clove, mincedjuice of 1 lemon
4 tbsp chopped fresh parsley
2 tbsp olive oil
2 tbsp capers, rinsed
Sea salt to taste
Instructions:
1. Put the onions in a container, add 3 tablespoons of the lime juice and cover with water. Let them soak for 30 minutes then drain. Rinse beans well and drain. Drain water from tuna.
2. Toss the remaining citrus with the onions. Mix in the rest of the ingredients. Serve on a bed of lettuce.
